I subscribe to an online newsletter called the Daily OM. It is wonderful, a thoughtful treasure of wisdom that comes in the form of a daily horoscope(which is well-grounded)suggested music and a daily OM, a thought provoking article that provides wonderful and thoughtful spiritual perspective on living.Today's was stepping out of the comfort zone and setting aside fear in order to fully engage in all that life has in store for us. This evening I headed out the door to walk after my fattening dinner. I am cleaning out the refrigerator and using up what is there in anticipation of my move on Thursday to my permanent quarters. I had plain yogurt, cheese and eggs. I could have made macaroni and cheese but I didn't want to eat the pasta, so I decided to try to make a cheese souffle, one step above or below the macaroni and cheese-I am not sure,but a little decadent for sure. I didn't have milk, so I used the plain yogurt and added water to thin it out.
I made a roux(a little melted butter to which I added about two tablespoons of flour and seasoning. If I had some Dijon on hand, I would have used that and some Worcestershire sauce, too. At any rate once I stirred the flour and butter I added the yogurt until it thickened and then I added cheddar and Gouda. You could type of cheese you want but this what I had and it worked. I then added the last three eggs on hand, well beaten, to the mixture and poured it into a greased pan. It baked for about 20 minutes at 375 degrees and came out as a perfect load, brown on the top. I let it cool a little and ate a small slice with a little salad. Maybe you will try it and share with me your variation.
About that walk;I took a very long and very fast walk right after dinner to work off the calories and the fat! I have posted a few pictures from my walk on face book. One is a picture of the Irish World Academy, where my classes will be held and the other is of a double rainbow over the Irish World Academy that I took about five minutes later during a short rain fall. The pictures don't really capture the spectacular colors, but if you get a chance to look at them you will get at least a sense of what I saw.
Tomorrow I meet with my advisor and a woman from Dublin who is doing some work recording the music and interviewing the elders of the Dublin Jewish community, which is 150 years old. I am doing my elective on Jewish liturgy and ritual chant, so this is a terrific opportunity. I spent the morning preparing an outline for my course of study in preparation for this meeting and then read some more on Western Plain Chant.
All in all it has been a productive and satisfying day at the University of Limerick. I send my love from Glocca Morra.
